MORTADELLA, OLIVE TAPENADE AND ROCKET SANDWICH

Mortadella has a tough time sometimes because it bears an unfortunate resemblance to pork Iuncheon meat. Please believe me when I say that’s where the comparison ends; it tastes so much better and has a lovely, pure flavour and texture. This another simple sandwich recipe combining some rich, dark flavours with the mortadella.

Ingredients

8 slices fresh bread of your choice Butter (at room temperature),
For spreading
4 tablespoons Olive Tapenade (Ziel Deli) 8 slices mortadella
A large handful of rocket/arugula Balsamic vinegar, to drizzle

Directions

Lightly toast the slices of bread (or use them untoasted, if you prefer).
Spread butter over the toasted bread, then spread the olive tapenade over 4 of the slices. Add the slices of mortadella (2 slices per sandwich) – it’s soft to bite so you won’t need to shred it. Add some rocket/arugula to each and then a drizzle of balsamic vinegar.
Top each with a second piece of toasted, buttered bread to make 4 sandwiches. Serve immediately.
