Chorizo and Bean Burger

I would find it impossible to compile any collection of recipes without including a beloved burger (and do a little new product development in the process). Having always enjoyed the flavour combination of beef and pork. I love the mixture of fresh minced/ground beef with a cured pork, like chorizo. Resource by Miranda Ballard

Ingredients

FOR THE BURGER
400 g /14 oz. lean minced/ground beef
125 g /4½ oz. chorizo, finely diced
80 g /3¼ oz. canned red kidney beans (drained weight), rinsed, drained, and crushed
60 g /2¼ oz. breadcrumbs
4 tsp. tomato purée/paste
1 tsp. freshly chopped parsley
Sea salt and freshly ground black pepper

Directions

Put all the burger ingredients in ‘n large bowl and mix together really well with your hands. Divide the mixture in to 4 and then shape each portion into a burger.
To cook the burgers, fry them in a frying pan/skillet over medium heat for 12-15 minutes, turning a few times, until cooked through.
Alternatively, pop them on the rack in a grill/broiler pan and cook under a preheated hot grill/broiler for 6 minutes on each side, until cooked through.
Serve the hot burgers in the bread rolls with some salad leaves/greens and the condiment of your choice.
